Too many tomatoes?

It’s officially FALL (!!) and it’s that time of year when our garden production surpasses our ability to eat things while they are still fresh. Now is the time to get creative and start saving our harvest for the upcoming cooler months. We decided to stay in town over Labor Day weekend and I got into a food preservation mode- pickling, canning, freezing and drying.

Too many cucumbers? Let’s make some jars of quick pickles! Too many tomatoes? Let’s make sauce and slow-roasted cherry tomatoes.

Herbs and flowers? Harvested, tied up in bunches, and hung them up to dry! 

Phew! That was a lot of work, but we’ll definitely appreciate having these things in our back pockets once Winter comes along.
